The Best Seasons for Tasting Crabs

The Cantonese have a unique calendar-based philosophy about tasting crabs. According to them, January is the season for hard shell crabs, February for water crabs, and March for green crabs. April is the season for black crabs, while May is for blue crabs, and June for young hairy crabs. In July and August, blue king crabs take the spotlight, followed in September and October by hairy crabs, and the year finishes up with mud crabs in November and December. In other words, every month is the best season for crabs – they are a delicacy all year-round!
